  • 1-2 cups of white sugar or 1/2 to 1 cup of honey;
  • 2 teaspoons of pectin;
  • 2 teaspoons of water.

Banks must be sterilized, it is best to keep each in turn on the steam bath before we wait inside.

Fruits are ground with a blender or through a meat grinder, if these devices are not available, you can mash the berries with your hands. Add the required amount of water to the pan, mix well. The resulting mixture is brought to a boil.

The correct amount of pectin powder is added to honey or sugar and mixed well until there are no lumps. Pour the mixture to the composition in a saucepan, mix vigorously for 1-2 minutes to dissolve pectin completely. Boil and remove from heat. Let the jam cool slightly before placing it in jars.

Tara is filled, leaving space at 1/4 to the top. It is advisable to use screw caps with thread, because so less hassle with seaming. Before use, the lids are also boiled to prevent the ingress of dirt and germs inside.

Low sugar

This recipe contains not only strawberries, but also a banana, which makes the jam incredibly fragrant.

Ingredients:

  • 3 cups strawberry puree;
  • 1 cup banana puree;
  • 1/4 cup lemon juice;
  • 1-2 glasses of granulated sugar or 1/2 cup of honey;
  • 2 teaspoons of pectin;
  • 2 teaspoons of calcium water.

Only ripe bananas are ideal for cooking, which, together with berries, must be ground with a blender or wrung with hands to obtain a homogeneous mass. Lemon juice and water are added to the mixture. Everything is mixed well and brought to a boil.

Pectin is poured into honey or sugar, mixed until lumps are gone. Everything is brought to a boil and poured into a container of banana and strawberry. Already in this form, the jam is boiled for a couple of minutes and poured into banks. The container must be sterilized together with the lids.

Classic recipe for winter

Classic strawberry jam with pectin is loved by many children and adults. It has a lot of sugar, thereby increasing the shelf life. Prepare this jam exclusively from fresh berries.

For this you will need:

  • 5 cups chopped strawberries;
  • 1/4 cup lemon juice;
  • 6 tablespoons of pectin;
  • 7 glasses of granulated sugar.

Banks are washed before use and boiled in a water bath. Lids can be well washed in warm, soapy water.

Chopped strawberries and lemon juice are placed in a pan and pectin is mixed in them. Bring to a boil over high heat, stirring constantly. Spoon must necessarily reach to the bottom so that the jam is not burnt.

Immediately pour all the sugar and stir until it dissolves. Boil one minute and remove from heat. You can start rolling cans.

A day later, check the joints on the lids, if everything is normal, and the banks are cold, they are removed to a dark cool place, usually in the cellar.

Thick, low-sugar, pectin-free strawberry jam

Using lemon juice and spending a little more time, you can make strawberry jam without pectin. It will have a more liquid structure, but taste is even better with such a product.

It will take:

  • 453 g of strawberries;
  • 1⁄2 cups (about 100 g) of white sugar.

It will be necessary to mix strawberries and sugar in a bowl with a thick bottom, cover and boil over medium heat for 12-15 minutes.The resulting mixture is crushed with a blender or tolkushkoy, flame burners reduced to minimum and do not remove the pan for thirty minutes. During this period, the excess moisture will be removed, and the jam will acquire the necessary consistency.

The mixture will have to be stirred regularly so that the sugar does not burn to the day of the pan. Now the container is removed from the heat and allowed to cool the jam. Shift in small banks, clean in a dark and cool room.

With lemon zest

Mix sugar, lemon zest and lemon juice in a small saucepan. Cook over very low heat for 10 minutes, until the sugar has dissolved. Add forest berry and continue cooking on low heat for 20 minutes, until the berry releases the juice and the mixture boils.

Used jars should be hot, because cold storage for storage is laid out in the same container, and hot must be boiled. Use forceps when working, they also need to be sterilized by dipping the ends in boiling water for a few minutes.
