Drying

In order to preserve all the valuable properties of the fruits of wild rose when drying, it is necessary to consider some points. The fact is that ascorbic acid is a very unstable substance, especially to high temperatures, as well as to the effects of ultraviolet rays. That and the other leads to the destruction of vitamin C. Therefore, dried rose hips in places where there is no access to the sun's rays, and if they use an oven or other appliances, the temperature in them should not exceed 60 degrees.

A well ventilated attic or veranda is considered the best place for natural drying of wild rose - berries, petals, leaves or roots. Raw materials are placed in a thin layer on the pallets, daily shaking or mixing it regularly. If the temperature outside decreases at night, but below zero, pallets with raw materials are brought into a warm room, and in the morning they are returned to their original place. After 2 or 3 weeks, the drying process is completed. The raw material is put in a cardboard container and it is not closed for a couple of days so that the last moisture can come out. Then the box is closed, removing it in a dark, dry and cool place.

To speed up the drying process using a gas or electric oven or vegetable dryer. During drying, it is necessary to create conditions so that moisture from the raw materials can evaporate. To do this, open the oven door, and the raw materials are periodically mixed. The most important thing is not to overdry the dog rose to such an extent that it will begin to crumble into dust, since such raw materials are not suitable for use. It will also be unsuitable in the event that the fruits turn black from the heat - there will be no benefit from them, since all the beneficial substances will be destroyed.

The average drying time using heaters is 7-10 hours, the skin of the fruit will look wrinkled, and spring back when pressed. After this dogrose should cool at room temperature, and then packed in fabric bags or glass jars with a tight lid.

You can store a ready stock for up to 3 years, after which the biological activity of such blanks is significantly reduced.

Freezing

Fresh berries after harvest and primary processing can be preserved by freezing at low temperatures. Fast freezing allows you to save useful substances, but the berries should be thawed only at room temperature, without the use of heating devices. For freezing choose large-fruited varieties of wild rose, in which the berry resembles the shape of a ball oblate at the poles. These varieties are not suitable for drying because of their fleshyness, and are quite suitable for freezing.

Preservation with sugar

Fruits or petals of wild rose are suitable for preservation, from which jam is made, and syrup is made.

To cook the jam, the wild rose fruit is punctured with a needle to better yield the juice or cut in half, removing the seeds. Sugar syrup is prepared separately, dissolving sugar in water and bringing to a boil. Berries are poured with hot syrup, then the resulting mass is brought to a boil, but not boiled, and then removed from the heat. The jam is allowed to brew for about 3-5 hours. Then again bring to a boil, remove from heat, allow to infuse. This is done several times until the jam is reduced, becomes thick and has a rich color.

Syrup from the petals are prepared differently - fresh petals are poured with sugar and cleaned in a cool place for the night. During this time, the petals will give the juice, which is poured into a separate bowl. The remaining raw materials are again poured with sugar, leaving overnight to get the juice again. The collected syrup is bottled and stored in the refrigerator. Syrup is added to tea, drinks, fruit drinks, decoctions and for the preparation of confectionery. The remaining in the manufacture of syrup petals are not discarded. They add sugar syrup to get jam, which is cooked on the same principle as from the fruit.

Blanks with alcohol

. From dogrose on alcohol or vodka make tinctures with a long shelf life. Fresh berries are used, which are washed, peeled, and then lightly kneaded for better juice yield. Oil making

From dogrose prepare oil. To do this, use the fruit or seed nuts. Raw materials are crushed, then poured vegetable refined hot oil. The oil is not brought to a boil, but it must be hot in order for the rosehip to give all its nutrients to the maximum.

Buttered rosehip is closed in a container so that it can infuse for 10 days. Then the composition is filtered and rosehip oil is ready for use. Keep it in a dark, cool place in a tightly closed container.
