 What can be cooked from old cottage cheese?

If you have not had time to eat cottage cheese or use it in any other way before the expiration date has expired, and as a result, the product is a little bit sour, but has not yet had time to change color or mold, do not rush to throw it away, because there are many recipes from sour curd.

Expired Curd Cheesecakes

Most mothers know that cheesecakes are an easy and tasty dish for children, in which you can “hide” the cottage cheese they don't like. Delicate golden cheesecakes can be served for breakfast, afternoon tea and even dinner, offer children instead of less healthy store cookies and sweets.

And if you decorate cheese cakes with powdered sugar, cream and fresh or canned berries, you will get an exquisite dessert. At the same time it is easy to prepare the dish, even an aspiring cook will cope with it. And this recipe is suitable if the cottage cheese is gone and a little soured.

Ingredients:

  • a pack of sour curd;
  • 50 grams of sugar;
  • 1 egg;
  • 50 g butter;
  • 50 grams of wheat flour;
  • raisins, vanilla.

Raisin pour boiling water and leave for half an hour. Curd cheese through a sieve, mix with egg and sugar. Stir, add vanilla and softened butter, and then, constantly kneading, add flour. It may take a little more or less - how much will take the dough. It should remain elastic, rather wet, but homogeneous.

At last steamed and slightly dried raisins are introduced, the mixture is mixed once more. Small cakes are formed from it, about 5 mm thick. They can be cooked in a pan, toasted on each side. You can bake in the oven for about 15 minutes. Finally, you can adapt the slow cooker for this, using the “Frying” mode (you will also have to turn the cheesecakes) or “Baking”.

Biscuit

The recipe for this cookie includes not only cottage cheese stale in the fridge, but also old, dried oatmeal cookies. This can often be found in almost every kitchen - at the bottom of the box there are a few pieces that no one else has, but it's a pity to throw them out.

Composition:

  • half a pack of cottage cheese (120-150 g);
  • 4-5 pieces of oatmeal cookies;
  • 2 eggs;
  • sugar to taste.

Cookies need to be turned into flour. To do this, you can roll it with a rolling pin, first putting it in the bag. Easier - break it into pieces and punch through a blender.

Cottage cheese need to grind through a sieve, add eggs with sugar and mix. Now, gradually, the resulting oatmeal should be introduced into the curd-egg mass and kneaded a rather dense “dough”. If necessary, you can add a little milk (if a friend sprinkled excessively oatmeal).

Baking a baking sheet with baking paper, pinching small pieces from the “dough”, form a ball and then a cake from them. Bake cookies for about half an hour at a temperature of 180C until golden brown.

The finished product remains soft inside, but with a crisp crust. Sugar should be put quite a bit, because oatmeal cookies are also sweet.

The following recipe is unsweetened sesame biscuits. It looks more like a snack or snack. And it can also be made from old cottage cheese. To do this, take:

  • briquette sour cottage cheese;
  • 100 g butter;
  • 1 egg;
  • 1.5 cups flour;
  • 1 teaspoon salt;
  • sesame seeds.

Curd mash, salt. After that, enter the flour and butter. Form an oil crumb, roll the dough into a ball and remove it for half an hour in the refrigerator. Then roll into a layer, cut cookies (using molds or just a knife).

Baking a sheet of parchment, shift cookies. Beat the egg a little and smear it with future baking. Sprinkle with sesame seeds. Send in the oven for 20 minutes at a temperature of 200-220C.

If the refrigerator "hid" not only soured cottage cheese, but also sour cream with an expired shelf life, you should combine them in the next dish, for which you will need:

  • 1 cup of sour curd and sour cream (the fatter the better);
  • 2 eggs;
  • 5 tablespoons of granulated sugar;
  • a glass of vanilla breadcrumbs or 100 g of any store cookies.

If cookies are used, they should be turned into crumbs. This crumb or vanilla crackers are placed on the bottom of the molds for cakes or cookies. From cottage cheese with sour cream, eggs and sugar cook stuffing. Spread over the pastry or crackers stuffing and sprinkle with the remaining chips. Leave for 10-15 minutes to soak the cookies, then bake for 20-25 minutes at a temperature of 170 ° C.

Experimenting with different types of cookies, you can change the taste of the finished dish. You can add chopped nuts to the crumb, or take chocolate chip cookies. In the filling you can put a little orange peel, lemon or cocoa.

Casserole Recipe

For casseroles, as well as all the dishes listed here, you should take a little expired cottage cheese. That is, speaking of the fact that the dish is made from sour curd, it means that its shelf life expired 2-3 days ago. If the product emits a too sour aroma, a lot of liquid has formed in the package or it has changed color, it cannot be eaten in any form.

Composition:

  • 250 grams of sour curd;
  • 150 grams of butter (previously get out of the fridge so that it becomes soft);
  • 2 eggs;
  • 400 g of flour;
  • 150-200 g of sugar;
  • 1 lemon;
  • half a teaspoon of baking powder.

From flour, half the norm of sugar, baking powder and butter need to make the dough. It will have the appearance of oily crumb. It is important that the dry ingredients are thoroughly mixed, and the crumbs formed are as small as possible. If the mass seems too oily, you can add another 50 g of flour.

Scald the lemon with boiling water and then remove the zest from it. Add it to the curd, there break eggs. Mix everything thoroughly. Add the remaining sugar and beat the mixture with a mixer.

At the bottom of a round shape, pre-lubricating it with oil, spread the oil chips, tamping it with the bottom of the glass. And also you need to form the sides of the test. Now it is necessary to pour in the form of cottage cheese with eggs. Bake the dish for half an hour at a temperature of 170-180C.

The casserole is tasty both hot and cold. It will replace breakfast or afternoon tea, and in the cold it goes well with tea and coffee, serving as a dessert.

If the casserole for this recipe is more like a royal cheesecake or a light pie, then the following recipe may well claim to be a “classic.” The casserole turns out a light, airy, homogeneous consistency.

Ingredients:

  • 250 g (pack) of sour curd;
  • 2 eggs;
  • 50 g of semolina;
  • 100 g of sugar;
  • 30-40 g butter.

Curd should be ground through a sieve and mixed with sweetener. Then enter the eggs, semolina and butter. Stir well again. Grease the form with vegetable oil, sprinkle with semolina a little and put dough into it. Bake at a temperature of 170 ° C for 20-25 minutes.

Pancakes

Sour-milk fritters are a fairly well-known recipe. But if cottage cheese sour, you can also add it to the dough. The result is nourishing and fluffy pancakes, which are harmoniously combined with sour cream, fresh berries or jam. For this you need to take:

  • a pack of sour cottage cheese;
  • 150 ml of milk;
  • 2 eggs;
  • 1.5 cups flour;
  • a little more than half a glass of granulated sugar;
  • half a teaspoon of baking powder;
  • a pinch of salt.

Sift flour with baking powder, saturate with oxygen. Curd whisk or a mixer at low speed with milk. Add sweetener, salt, eggs.

Mix the liquid ingredients with the dough, knead the liquid (sour cream consistency) dough and leave it for a quarter of an hour.

In a frying pan with a thick bottom (cast iron will be ideal) pour a thin layer of butter and wait for it to heat up. Pouring dough into the pan, begin to fry the pancakes.

As soon as holes appear on the top surface of the fritters, and the bottom podzolitsya, it is time to turn them. The second side will fry faster, after which you can cover the pan with a lid for a couple of minutes. This will allow the dish to completely bake from the inside.

It is important to adjust the intensity of the fire. He should be moderate.If you fry on high heat, the pancakes will burn, remaining raw inside. If the fire is small, the pancakes will lie in oil for a long time and as a result they will not rise.

Donuts

Donuts are loved by both adults and children. These airy, deep-fried "balls" perfectly complement the tea. It is important that they are prepared from the available products, and the recipe allows you to recycle unsuitable cottage cheese. So, for cooking donuts from spoiled cottage cheese you will need:

  • 2 cottage cheese briquettes;
  • 4 eggs;
  • 7-10 tablespoons (be guided by the acid of cottage cheese and your own taste preferences);
  • 3-4 glasses of flour;
  • vanillin;
  • 2-3 tablespoons of butter;
  • half a teaspoon of baking powder for the dough;
  • half a teaspoon of baking soda.

Cottage cheese combined with soda, grind. Add sugar, eggs and softened butter with vanilla. Mix everything, then enter the flour in small portions. Stir dough after each portion of flour.

The result should be an elastic dough that does not stick to your hands. Heat oil in a deep fryer or sauté pan (it should be enough for donuts to float freely in it without touching the bottom of the dish). Dough breaks off the dough, forms into balls and baked in butter.

Fried out donuts get a little wet with a paper towel. Serve sprinkled with powdered sugar.

The important point - all the recipes imply the use of slightly acidified cottage cheese. Frozen expired curd cheese will do. But if the “sour milk” has changed its color and smell, it has become too watery or has become covered with mold, that is, it cannot be even after heat treatment. This is due to the high content of pathogenic bacteria in it. When ingested, they will at least cause severe vomiting and diarrhea, at worst - rotavirus infections, salmonella, dysentery.

Small tricks will cook delicious dishes from stale cottage cheese.

  • If the dough turned out too crumbly, then before cutting it is recommended for half an hour to stand in the refrigerator. This will help make it elastic.
  • Even if this does not require a recipe, you can add a pinch of salt to pastries made from spoiled curd. Firstly, it will make the dish more tender, and secondly, salt will emphasize the sweetness of cookies or cheesecakes.
  • The amount of flour should be adjusted based on the consistency of the dough. If the cottage cheese is too liquid, then the flour will need more. It is best to add it in small batches.
  • Add a pleasant flavor to the baking by adding citrus, vanilla or cinnamon zest to the dough.
  • Neutralizing acid cottage cheese acid allows the addition of soda. And in order to make baking more tender, you should take 2 times more soda than the recipe requires. Add its first part to the curd, put out the second with vinegar or citric acid and add to the dough.
