Zubrovka
Zubrovka (also referred to as the summer dad) refers to perennial plants from the family of cereals.The grass has a pleasant fragrant smell, therefore, as translated from English, its name sounds like “sweet grass”. The plant got its name in Russia due to the fact that it is a favorite delicacy of bison. The people of Zubrovka are also called turovka, since tours also like to feast on this grass.
Appearance
Zubrovka rhizome creeping and long. The stem is smooth and straight; there are nodules on its body. In height, it can reach 0.3-0.7 m. The leaves are flat, elongated and sharpening to its upper part. Basal leaves are longer than those that are located closer to the top. The front side of the leaf is green, the back has a slight grayish tint.
Zubrovka flowers have a brownish-golden color and are collected in a large number of oblong spikes, which form sprawling panicles with them. The fruit consists of dark brown kernels and the peak of ripening reaches by August. Bisonas have very small seeds, which is very inconvenient when they are planted in the soil.
Kinds
The bison has about 30 related species. Eight of them are found in Russia and the countries of the Near Abroad.
Most often you can see the following types:
- Fragrant;
- South;
- Creeping
The second type is actively used in cooking, but the first has a stronger flavor, so it is used more often, including in traditional medicine.
Where is growing?
Zubrovka can most often be found on forest edges, in thickets, it also grows alongside roads, in pine or spruce forests, along rivers and in mountains, at altitudes up to 3 km.
The most widespread grass was in temperate latitudes in European and Asian territories, on hills in tropical zones, in North America. Zubrovka endures cold, therefore it grows in large numbers in the European part of Russia, in the west of Siberia, the Far Eastern territories, in the Caucasus Mountains. It occurs in the form of weed. It can grow in almost any soil, but sandy for bison is preferable.
Special features
Zubrovka looks rather inconspicuous, but has a very pleasant fresh aroma, therefore the grass is used even as a flavoring for tobacco. Often the plant serves as food for livestock, as it contributes to an increase in milk yield, but animals cannot use it in large quantities.
Branched root hogging system helps to strengthen embankments and steep slopes.

Zubrovka has the following characteristics:

Chemical composition
Zubrovka is rich in chemical composition. It includes:
- coumarin;
- vitamins (B1, B2, B5, B6, B9, B12, C, H, PP);
- potassium;
- calcium;
- magnesium;
- zinc;
- copper;
- selenium;
- manganese;
- phosphorus;
- sodium;
- iron;
- vitamin C;
- ferulic acid;
- alkaloids;
- bitterness
The fresh and fragrant aroma of the plant is the merit of coumarin. Thanks to this substance, the plant can be used to stop the blood.
Ascorbic acid, being a natural antioxidant, helps strengthen the body's tissues and bones and improve metabolic processes.
Ferulic acid is also an antioxidant that has a beneficial effect on the skin, slowing aging and protecting the skin from ultraviolet radiation.
The bitterness contained in Zubrovka helps to improve the appetite, and alkaloids help keep muscles in shape.

Beneficial features
The list of useful properties of bison is quite long:
- restores skin and hair pigmentation;
- is an excellent hemostatic agent;
- shows anticancer activity;
- strengthens muscles and walls of blood vessels;
- improves metabolism;
- has an antibacterial effect;
- increases appetite;
- normalizes the nervous system;
- stabilizes the work of the heart;
- exhibits antiseptic properties;
- increases lactation.
The plant is widely used in folk medicine due to its high content of useful minerals and vitamins. Actively used in viral diseases, increasing sweating. Zubrovka not only increases the appetite, but also helps in the treatment of gastrointestinal diseases.
Harm
Despite the fact that the herb does not bring much harm to the body, there are some side effects:
- headaches;
- residues of plant substances in breast milk when they use bison to enhance lactation;
- deterioration in the well-being of livestock.
Headaches occur due to coumarin overdose, there is even the possibility of migraines.
If you independently use broths of zubrovka to enhance lactation, then there is a risk of harm to the health of the child, since particles of the active substances of the grass can be stored in breast milk.
A large number of bison in the feed for livestock is akin to poison for pets.
When using the plant in aromatherapy you should not mix it with other coumarin-containing herbs, as well as cinnamon oil.
Official medicine does not use zubrovka for the manufacture of medicines, therefore, it is not always safe to prescribe yourself self-treatment with decoction or infusions of a plant.
Contraindications
Do not use teeth:
- pregnant women;
- in the presence of neurosis or other similar diseases of the nervous system;
- for insomnia;
- with personal intolerance to the plant;
- in the presence of acute forms of diseases of the gastrointestinal tract.
Butter
The essential oil of the plant is a frequent component in the production of perfumes and cosmetics, since its smell is similar to the fresh aroma of mown hay.
Application
In cooking
In cooking, the Zubrovka has found quite wide application:
- in the production of alcoholic beverages;
- when cooking pastry;
- in marinade;
- in the composition of some spices.
Surely everyone knows the famous liqueur "Zubrovka", whose history begins since the Middle Ages. By adding plants of the same name to it, the tincture acquires a bright herbal aroma. Zubrovka also acted as a component of honey liqueur in the composition of other spices. The recipe for liquor was known in Poland more than five centuries ago.
In the manufacture of confectionery products Zubrovka is often used to produce essences that enhance the taste and aromatic properties of products.
Herb is very popular as a spice for fish dishes. Zubrovka is added to some canned fish, as well as in the marinade for herring.
Zubrovka is rarely used as a separate spice, as it has a rather specific taste. Its addition usually depends on personal preferences. One French chef used spice as a spice for sauces. He was able to take second place in the culinary competition, having extinguished the pork shoulder and served it in a bison sauce.
Tincture
From the bison you can make a homemade tincture. For this you need:
- take 500 ml of vodka and a couple of plant stems;
- insist on vodka with addition of bison stalks to it for ten days.
The result is an infusion of light green color with a slightly tart flavor and herbal aroma.
Alcoholic Cocktail
Delicious alcoholic cocktails are also made from the bison. For example, Polish martini. To cook it, you will need:
- 50 ml of Zubrovka tincture;
- 25 ml of apple vodka;
- 25 ml of lime juice;
- 90 ml of apple juice;
- a couple drops of vanilla essence;
- five grapes;
- apple slices for decoration.
All ingredients, except apples, are mixed and shaken, and then poured into a glass with ice, which is then decorated with slices of apples.
In medicine
In folk medicine, Zubrovka takes pride of place. With it, you can treat:
- diseases of the gastrointestinal tract, including colitis, gastritis, ulcers;
- viral diseases;
- fever;
- anorexia nervosa;
- tuberculosis;
- cough.
For medicinal purposes, use only the stem and bison leaves, excluding basal. After collecting the grass, the inflorescences are cut, and the stems with leaves are dried in air.
Lotions of bison tincture help to turn blood and promote faster healing of wounds, as well as help in the treatment of fungus. Broths of grass stimulate appetite, strengthen the stomach and intestines.
When losing weight
Quite often Zubrovka is used as a specific tool for weight loss. If you drink tea with the addition of grass, the sweating begins to increase, respectively, the weight slightly decreases. In this case, the metabolic rate does not increase, and fat is not burned. This method of losing weight is not approved by doctors, so you should not take it seriously.
At home
Zubrovka applied:
- as a flavoring or fragrance;
- in agriculture;
- to strengthen the steep slopes.
If you add bison to the hay intended for livestock feed, then the animals increase their appetite and improve milk yield. However, they are not very fond of the plant, because its smell is too sharp for them.
Growing up
The roots and plants are long and creeping. There are a lot of nodules on the rhizome, a new bush grows from them, from which another one is formed, and so on. The roots intertwine with each other tightly, therefore bison may be undesirable neighbor for other plants. Place for landing is better to protect something.
You can sow grass with the help of seeds or cuttings. The seeds of the plant are extremely small and do not germinate well, so it is best to take seedlings or cuttings. In order for a Zubrovka to grow quickly, you need to water it often and periodically feed it with fertilizer.
If you multiply a zubrovka with seeds, then you need to close them up to a small depth of up to 1.5 cm. After ten days, the first shoots will appear.
Care of a plant is practically not required, as its powerful root system successfully supersedes the remaining weeds. Diseases and pests of the plant are also not terrible. Negative effect on zubrovka lack of irrigation and fertilizer.
Interesting Facts
It is quite remarkable that the Zubrovka is considered a sacred plant. And still there are beliefs that its smoke scares away evil spirits. The Indians wove grass into their hair, and for a long time believers set fire to the leaves during religious ceremonies or scattered before entering the temple or the church.
Native American girls used bison, weaving baskets and mats from it, as well as stuffing pillows with it. The insect was frightened by the smell of the plant, but at the same time it was pleasant to man.
In Europe, churches on holidays are sometimes decorated to this day with bunches of bison, from which a pleasant sweetish aroma comes up.
