Marigold (Tagetes)
These plants come from America are familiar to almost every Russian person called "marigolds".The scientific name is Tagetes. Flowers are so unpretentious that even a beginner florist can grow them in their summer cottage. Marigold flowers are not only very beautiful, but also have a lot of useful properties, thanks to which they have found application in various spheres of life.

Appearance
- Stems are straight, form bushes, the size of which depends on the type of flower. The height of the bushes ranges from a few centimeters to a meter and more;
- The leaves are oblong, pointed, resemble feathers in shape;
- The flowers are round, all shades of yellow, red and orange. Types of marigolds with terry petals are common;
- Fruits are small black or brown boxes in which seeds ripen.
Kinds
In total, there are about 60 different species of marigolds.
The ones described below are the most common of the Tagetes:
- Rejected (This species is also called French marigolds) in wild conditions grows in Central America, and in Russia it is planted as an ornamental plant. This species is one of the highest, the stems grow to 80 cm in length. This plant is made essential oil, which is used in cooking and cosmetology.
- Erect (or African marigolds) also hails from Central America, but is quite common in urban flowerbeds and backyards in various countries of the world. The flowers of this variety are large, bright yellow or orange. Natural food coloring is made from inflorescences. Also, this type of plant is used to clean the soil from heavy metals.
- Mexican spicy (or marigold spicy Mexican). This is one of the highest species - Tagetes minuta. It grows up to 3 m. In height and has a lemon flavor. The flowers are small and not as fluffy as in other types of taggetes.
- Spicy (narrow-leaved) - Tagetes tenuifolia (derived from Mexico and Central America) has a fruity mandarin flavor. It grows in height no more than 40 cm.

In large quantities marigolds grow in the countries of North and South America. The rest of the world saw this plant several centuries ago, when it began to be actively removed from its natural habitat. Marigolds quickly spread throughout Europe, Asia, the Far East and other parts of the world, as they feel comfortable in all climatic conditions.
A method of making spices
In the homeland of the marigolds, the leaves of this plant are eaten instead of parsley and dill. This custom did not take root in Russian cuisine, but the flowers of marigolds were widely used - they began to be added to various dishes.
While the flowers have not wilted, you need to collect them, dry in a dry, well-ventilated room and chop. The spice made from marigolds is called “Imeretinsky saffron”. Keep this spice in a closed container in a dark place.
How to choose and where to buy?
If we talk about marigolds as spices, then you will find our stalls under the name “Imeretinsky saffron”.
Since real saffron is a very expensive spice, it is often replaced with dry marigold petals. They give dishes and drinks a yellow color, but do not possess the healing properties of saffron.

You can find marigold seeds in the spring in any seed store. In addition, you can independently collect seeds from flowers after flowering.

Butter
Essential oil extracted from marigold flowers, has a unique aroma, with notes of oriental spices and citrus. This oil is loved by perfumers all over the world, so it is part of many famous perfumes.
In addition to the pleasant smell, it has a number of useful properties. The emollient and antibacterial effects of marigold essential oil are well known, so it is used to treat corns, growths and skin infections of various origins.
Application
In cooking
- the spice is added to poultry, meat and fish dishes to give them a golden color;
- in a crushed form, they will not only make sweet pastry more fragrant, but also help it to brown;
- to make the color and flavor of borscht richer, you can add a few fresh marigold petals to the pan;
- fresh marigolds can also be crumbled into a vegetable salad;
- dried and chopped marigolds are traditionally added to pickles and marinades;
- In the homeland of Tagetes, a warming and refreshing drink is brewed on the basis of this flower.
In order to preserve marigold flowers for the winter, it is not necessary to dry them; instead, try to pickle the inflorescences.
Marinade
Gather a kilo of flower heads and cook the marinade. For the marinade you will need 2 tbsp. coarse salt, a few peas black pepper and half a liter of 3% -exus. Spread the flowers on the banks, pour the marinade and cork.
Biscuit
You can also make delicious cookies with the addition of tegetes.
Ingredients Required: 2 tbsp. dry or fresh marigold petals, 4 eggs, half a cup of sugar, half a cup of flour, 4 tbsp. butter.
Separate the whites from the yolks, whip the whites into the thick foam. Crush butter on a fine grater, add yolks, sugar and flowers. Add flour, then proteins. Mix well.
Put the dough in a greased form and bake in the oven until golden brown.
When the cake has cooled, cut it into small pieces.
In medicine
In folk medicine, marigold-based medicinal products are recommended to be used to eliminate the following health problems:

- Farmers feed up poultry with marigolds so that the yolk of the eggs turns bright yellow.
Growing up
The marigolds breed with the help of seeds.
In our climate, it is better not to plant the seeds directly into the ground, but first to grow seedlings.
Prepare a seedling container and fill it with loose soil. Make grooves in the soil and place flower seeds in them. Sprinkle the seeds with a thin layer of soil and slightly moisten it. Cover the container with a plastic lid or plastic bag. Make sure that the earth always remains wet, and the air temperature was within 15-20 degrees.
When the seedlings ascend, the cover can be removed. Twice a month use fertilizer for seedlings. Water the seedlings only after the soil dries. When the first leaflets appear, the seedlings can be swooped down (seated in separate containers), while deepening them into the ground by about 1 cm.
After the seedlings grow up, you can plant it in the ground, but before that make sure that the frosts have passed and no new ones are expected. Marigolds love loose earth, so the soil must be prepared before planting. Seedlings are planted in the hole at a distance of about 25 cm from each other, a couple of centimeters deepen the stem, sprinkle with earth and water.
Special caretaking does not require. It needs to be watered as the soil dries out, weed away from weeds and fed 1-2 times per month by special fertilizers.
