How to cook at home
Cooking mascarpone at home is quick and easy (just 10 minutes).
Only 2 ingredients are needed:
- 20% cream - 1 liter;
- lemon juice - 45 ml.
Cream should be heated to 80 C. Add lemon juice or diluted lemongrass. Put on a slow fire for 10 minutes. Cream put on linen or multi-layer gauze fabric. Let it drain for 24 hours. Cheese is ready. About 350 grams of finished product is obtained from a liter of cream.
Mascarpone cheese pasta
To prepare this dish you will need:
- pasta - 230 g;
- mushrooms - 200 g;
- grated parmesan - a quarter of a mug;
- Mascarpone - 95 g;
- spinach - 110 g;
- nutmeg - half;
- olive oil - a few tablespoons;
- salt, pepper - at will;
- garlic - 3 things.
The number of ingredients is designed for 4 persons.
Before you start cooking dishes, you need to remember a few recommendations from leading chefs.
- In order for the pasta to have a beautiful appearance (as in restaurants) and not to fall apart, it is recommended to slightly undercook it. It is important to find the line so that the product retains its elastic form, but at the same time it is not raw.
- Serve pasta recommended with tomato juice.
- For a beautiful visual design for cooking pasta is better to use pasta and mushrooms brown.
When the pasta is cooked, you need to leave some liquid in which they are boiled to make the sauce with it.
Pour the oil into the preheated pan and add the finely chopped garlic. Let it fry for half a minute. Then put crushed mushrooms (champignons), grated nutmeg in a pan. Mix everything well, fry over moderate heat for 6 minutes. Reduce fire and add chopped spinach to vegetables. Simmer for 3 minutes with regular stirring.
In a griddle add 0.5 cups of water, mascarpone, parmesan, salt, pepper. 2-3 minutes before the dish is ready, pasta is added to the pan. All ingredients are well mixed, languish for several minutes to saturate the aroma and are removed from the stove.
Risotto with Mascarpone
To prepare a dish for 8 people you will need:
- carrots - 6 pcs .;
- broth - 1 liter;
- special rice - 1.5 cups;
- Mascarpone - 1/4 cup;
- onion - 1/3 cup;
- Parmesan - ¾ mugs;
- dry white wine - half a cup;
- butter - 15 g;
- parsley - 10 g;
- vegetable oil - 10 ml;
- fresh thyme - 5 g;
- sugar - 5 g;
- salt - 2 g
In a heated pan pour in a large spoonful of oils of both types. Add grated carrots, fry for 4 minutes. Then pour water into the pan, add salt and sugar, cover and let the carrots sweat for about 5 minutes.
After that, remove the lid and wait until the liquid evaporates (carrots should be slightly roasted). Mix half the finished carrots with cup of water and grind in a blender. The remaining mass is set aside in a bowl.
The same pan, in which the carrots were stewed, can also be used for frying. To do this, add 2 tbsp to the pan. l butter and 1 vegetable. When they warm up and begin to hiss, lay a finely chopped onion. Fry with regular stirring for 2-3 minutes. Add rice, mix and leave to fry for another 1 minute. Add wine and prepare the dish until the liquid is completely evaporated, do not forget to mix it regularly.
Add carrot puree to the mass, mix and sweat for a minute. Pour pre-warmed broth into the pan gradually in 100 ml. The next portion can be poured only when the liquid added before this has completely evaporated. This operation must be repeated 8 times.The last 200 ml will be needed later.
Add carrots, which have been postponed, to rice (leaving a little for decoration). You can also put parmesan, Mascarpone grated on a fine grater (you can replace it with whipped cream), chopped parsley and thyme in a saucepan. Add the remaining 200 ml of broth (dividing it into 4 portions), salt, pepper.
Put ready risotto on plates, decorate with parmesan, carrots and parsley.
Fruit Dessert
To create this delicious, savory dish, you need to take:
- Mascarpone - 210 g;
- nuts;
- fruits (nectarines, pineapples, apricots, kiwi);
- berries (strawberry, mulberry, black currant, blueberry).
The fruit is finely chopped, the cheese is kneaded using a fork. All ingredients combine and mix well.
Tiramisu
To make this dessert, you will need:
- Mascarpone - 230 g;
- cream fat content above 20% - 1/4 cup;
- Cookies "Ladies Fingers" - 15 pieces;
- chicken yolks - 2 pieces;
- rum - 30 ml;
- instant coffee - 4 tsp;
- cocoa - 1 tbsp. l .;
- water - 140 ml;
- dark chocolate - 1 tbsp. l (for decoration);
- sugar - ¼ cup;
- salt - on the tip of a knife.
Mix the rum, coffee and water until a homogeneous consistency. Chicken yolks with a blender. Add salt and sugar, beat for a few minutes, until the mass becomes white. Pour in rum, beat for another half a minute. Add Mascarpone to the whipped yolks, put the mixer at low speed and beat the mixture for another half minute.
Cream also needs to be whipped. First at a slow speed for 1 minute, and then at an average of 3 minutes so that soft peaks form.
The next part of the cream mixed with cheese, mix well. Then add the rest of the cream. Mix everything well again.
Cookies should be lowered one by one into the coffee mass for a few seconds, and then laid in one layer in a detachable form with dimensions of 18x13.
½ cream put on cookies, spread evenly with a tablespoon. Sprinkle with cocoa powder on top. Similarly, make and subsequent layers.
Ready dessert cover and clean the day in the fridge. Before serving, sprinkle chocolate chip Tiramisu.
Strawberry dessert
For cooking you will need:
- natural yogurt - half a glass;
- Mascarpone - 200 g;
- strawberries - 250 g;
- lemon juice - 1 tsp;
- white chocolate - 100 g;
- powdered sugar - 2 tbsp. l
This amount of ingredients is enough for 2 servings. If you can not use the real Mascarpone, you can replace it with cream or cottage cheese, however, the taste of the dessert will be completely different.
Chop the chocolate into small slices, put in a cup and put in a water bath. Wait until the chocolate melts completely and becomes homogeneous in texture.
Beat cheese along with yogurt in a blender until smooth. Add chocolate mass and continue to beat.
The resulting mass is decomposed into bowls, cover with foil and put to cool in the refrigerator for 45 minutes.
Rinse strawberries well, remove particles of earth, tails, put on a napkin to make the glass excess moisture. Berries load in a blender. Pour in lemon juice and add icing sugar (to taste). Bring berries to a puree state. Pour strawberry mass on top of the cheese layer and put into the fridge for cooling.
Bread with two types of cheese
For cooking you will need:
- loaf - 1 pc .;
- Mascarpone - 100 g;
- onions - 1 pc .;
- feta cheese - 200 g;
- smoked sausage - 130 g;
- garlic - 2 cloves;
- salt, pepper - to taste;
- a little parsley, dill, spinach and dill.
Baton can bake yourself or buy in the store. Cut it into pieces, but not completely, leaving 1 cm. It is necessary that the bread does not fall apart.
Grind herbs in a blender, add Mascarpone, garlic, onion and feta. Spray until a homogeneous consistency. In the resulting mass add finely chopped sausage. Stuff the bread with prepared mass, wrap in foil and send to the oven for half an hour at a temperature of 150 C.
