How to produce?
For the first time such processed cheese was produced in Scotland from rennet cheese that had been lying for a long time. In order to save the product from final drying, it was mixed with baking soda and fatty oil and melted all this in a water bath into an elastic mass, forming from it small bars resembling sausage in shape. Subsequently, the production technology changed, some ingredients appeared and others disappeared. At the moment, the whole process of making such cheese takes several stages.
- Rennet cheeses are mixed using a special machine with the rest of the ingredients. Depending on the recipe, it can be cottage cheese, butter, cream or other dairy products.
- The whole mass is melted in a large boiler and poured into solid forms.
- Chilled cheese bars are treated with natural sawdust smoke. Some manufacturers use liquid smoke that is not very useful for the human body in an attempt to save money. This odorous liquid is added at the first stage, when mixing all the ingredients.
- Frozen sausages pack vacuum film and transported to the store shelves.
The nutritional value
The caloric content of such a melted product depends on the fat content of the initial raw material and composition. Sausage cheese is not a diet product. 100 g of smoked delicacy contains on average about 350 kcal. The nutritional value of this weight will consist of 22 g of proteins, 20 g of fat and 4 g of carbohydrates. Since most often the cheese is used in the ground form, it is easier to measure its caloric content in one tablespoon.

- 100 g of sausage cheese (you can take both smoked and ordinary processed product);
- 1 loaf of white bread;
- 1 chicken egg;
- 300 g ham turkey or chicken;
- 2 pickled cucumbers;
- spices to taste.
Ham is cut into cubes, cucumbers into circles, and cheese is rubbed on a coarse grater. All ground ingredients are mixed with raw chicken eggs and spices. Plain salt and pepper will be quite enough, but in order to shade and complement the taste of smoked cheese, you can mix half a teaspoon of smoked paprika into the mass.The loaf is cut into slices from 1 to 1.5 cm thick and laid out in a pan, sprinkled with vegetable oil or greased with butter.
The pan is covered with a lid and placed on medium heat for 7-10 minutes. As soon as the cheese is melted, and the egg, on the contrary, seizes, the pan can be removed from the heat and set about to serve the table.

Cheese "Raffaello"
This spicy snack is very similar in appearance to the famous coconut candies, it is usually cooked on a festive table and less often - as a quick snack. For cooking you will need:
- 300 g smoked sausage product;
- 3 chicken eggs;
- 1-2 cloves of garlic;
- 100 g of crab sticks;
- mayonnaise, salt and pepper to taste.
Eggs are boiled and cooled, cheese and crab sticks rub on a fine grater in different plates. Chilled and peeled eggs, passed through a fine sieve or grated on the smallest grater, are added to the grated cheese container. Garlic is squeezed into the cheese-egg mass, spices and mayonnaise are added.
The resulting paste is thoroughly mixed and form from it small neat balls. Each ball is rolled in crab sticks and placed in a refrigerator for 20-30 minutes.
When serving, you can stick a skewer or a toothpick into each "Rafaelka" to make it easier to take them from a flat plate.
There are many different salads with sausage cheese, sandwiches and appetizers with it. As an appetizer, you can even cook just a batter in batter, serving it along with a tomato or cheese sauce. The secret to quick potato casseroles is to use potatoes that have already been boiled until half cooked. It is baked for several minutes and the remaining ingredients do not have time to dry out. For cooking you will need:
- 5 large cooked potatoes;
- 150 g sausage cheese;
- 1 tbsp. spoon of vegetable oil;
- 2 white onions;
- 1⁄2 glasses of thick cream;
- greens and spices to taste.
Potatoes are cut into large circles, onions are cut into half rings, and the greens are finely chopped. The glass mold for the microwave is smeared with vegetable oil, a layer of potatoes and onions is laid on the bottom. From above the layer is sprinkled with spices and spread with sour cream.
The following layers are laid out in a manner similar to the first one until the products run out. On top, everything is filled with sausage cheese, grated on a coarse grater, and placed in a microwave for 10-15 minutes at maximum power.
Once the melted cheese has acquired a brownish crust, you can remove the casserole and lay it out on plates.
In the oven
In the oven, baking is most often prepared, which is practically impossible to do in the microwave. Sausage cheese will give such dishes a special aroma and a little salty.
Onion pie with sausage cheese from the finished dough
This is a quick recipe for those who like to pamper themselves with hot pastries, but do not want to suffer with kneading dough. For the pie will need:
- 250 g puff yeastless dough;
- 250 g smoked sausage cheese;
- 3 onions;
- 2 chicken eggs;
- 2 tbsp. spoons of vegetable oil.
Onions are cut with thin half-rings, cheese is rubbed on a large grater.Chicken eggs are beaten in a deep plate until light foam is formed, grated cheese and onion half rings are poured in them. Thick mass is thoroughly mixed and placed for 10-15 minutes in the refrigerator.
The form is greased with vegetable oil and is lined with ready-made dough, high sides are necessarily made. A cold filling is laid out on top of the dough and the cake is placed in the oven, heated to 200 degrees for 40-50 minutes.
Before you get the finished dish from the form, you need to let it cool to room temperature.
