Vanilla
Vanilla refers to perennial plants. According to the biological classification, it is referred to as lianas.Belongs to the Orchid family (Orchid).

Appearance
Can curl over trees up to a height of 15 m.
The vanilla trunk is knotty, relatively thin: its diameter is up to 2 cm. The trunk practically does not branch.
The leaves are long, flat and fleshy, pointed oval. They grow on a stalk between the nodes and attach shoots to the tree around which the vine twines. On the nodes, on the back side of the leaf, the root grows. Due to it, the vine is also tightly attached to the tree.
Clusters of flowers are on short stalks. They are formed in the axils of the leaves and contain about 15 flowers of yellow-green color, which have a rather sharp aroma. The perianth consists of five leaves, and in the sixth a pistil grows with a stamen. Since it is enclosed in a tube, it is more difficult for butterflies to pollinate it.
The flowers form green fruits in boxes (many are mistakenly called pods). The ovary forms a fruit of a narrow oblong shape, which is a box with three sides in the shape of a cylinder. The length of the fruit can reach 25 cm. Their width is about 1.5 cm. They contain pulp resembling mousse, and there are many black seeds in it. Fruits are harvested when they turn yellow.
Kinds
Officially, there are 103 types of vanilla. Most of them are considered decorative.
Spice is obtained from three types:
- Flat sheet (Vanilla planifolia) - provides the best quality spices, has pods, reaching a length of 0.25 m. Has the widest application.
- Tahitian (Vanilla tahitensis) - this species grows in Tahiti. She has red-brown pods that have a floral exotic scent with hints of fruit and a touch of tobacco. They contain less vanillin and therefore are cheaper. Used in the preparation of desserts, ice cream, creams. It is also used in the field of perfumery.
- Guadalupe (Vanilla pompona) from Central and South America - vanilla from the pods of this species is no longer of such good quality and is valued less. The aroma is similar to Tahitian, serves for the production of perfumes and the flavoring of tobacco.
Where is growing?
Vanilla grows in tropical and subtropical areas. Most often it is cultivated in countries located on the equator. The largest production volumes of vanilla belong to the island of Madagascar. At the same time, vanilla is exported in China and Indonesia.
There was vanilla from Mexico and Central America, after which it gained its popularity in other countries.
A method of making spices
From vanilla pods get the most famous spice - vanilla. The process of obtaining vanilla spices is rather complicated. The fruits themselves do not smell.
To give their unique flavor, they are subjected to fermentation:
Initially, the pods are collected not quite ripe, yet they did not have time to open.
- It is necessary that the pod be dried (to prevent rotting) within 8-10 days, but at the same time moisture should remain in it, and in no case should the enzymes responsible for the production of vanillin suffer. It is impossible to determine this by the indications of the instruments. People engaged in the cultivation of vanilla, can only rely on their own abilities.
- Then they are kept for 5 weeks in the shade. At the same time they become brownish-black, acquire elasticity and begin to smell.
- After that, they are tied up in bunches and left for another month in metal boxes, where they acquire their unique bouquet.
- Vanilla is sent in wooden boxes lined with wax paper. This checks every bundle.
White bloom on the pods - and there is natural vanillin, the content of which is not more than a few percent in vanilla. The pods lose most of their weight during drying, but they begin to exude flavor.
Cooperative manufacturers invite special tasters, who by smell define a pod with a defect. This pod is removed, because it can render the whole bundle unusable.
How to choose?
The quality of vanilla depends on the type of vine and drying conditions. The appearance of the pods is taken into account. They should be quite elastic, slightly curl. Their surface should be slightly oily and have a brownish color with a white coating.
