Muscat color (mace)
Muscat color is called spice, which is obtained from the plant Myristica fragrans (nutmeg fragrant).Another spice is extracted from the same plant - nutmeg. Another name for nutmeg is “mace”.
Appearance
Despite the name of the spice, which reminds us of flowers, it is obtained not from the flowers of the plant, but from the seedling (it is also called aryllus).
- It is a film from bright red to purple around the nutmeg seed and is the crown. Often on Arillus there is a grid of cuts, giving it a resemblance to petals, but there is also a solid prisemennik. It is removed from the fruit of an evergreen nutmeg tree.
- The fruits of this plant are represented by dense spherical-ovate berries of yellow-orange color. When they ripen, the dense skin and pulp are separated in two, exposing the shiny brown seeds and bright red aryllus.

Now fragrant nutmeg is represented by about 120 different species.
Where grows
The homeland of the plant is the Moluccas, which for a large number of nutmeg and clove trees are also called Spice Islands. Today, nutmeg is grown in Asia (Southeast and South), Africa (in the east of the mainland), on the island of Madagascar, and also in South America.
A method of making spices
High-quality nutmeg color - it is a fragile, but solid plate, which shines a little. Its width is about two or three centimeters, its length is up to 4 centimeters. The color of such a plate is even, dark yellow or light orange. In the center of the mace there is a hole, and at the edges it is as if divided into blades (10-15 parts). A good muscat color has a pronounced structure.
They try to remove the mace so as not to damage it (the nut is squeezed out), because such raw material is sold more expensive than the broken one. Often you can buy nutmeg, which is crushed into powder. In general, the form of a mace in length is about 3-4 cm.
Dry the raw material in the sun, laying mace on a coconut or bamboo mat. Already on the first day of drying, in the evening, the nutmeg color loses its brightness and elasticity. It becomes much paler and acquires a color significantly different from the initial one - from golden brown to orange.
The spice becomes softer and, while it is supple, the mace is flattened. Packing and storing nutmeg in a flat form will be more convenient as the dried spice becomes very fragile.

Fruiting trees begin with the sixth year of development. The harvest of fruits from nutmeg trees is collected up to 3 times per year. Fruits are harvested when they open. The nutmeg is propagated by seeds.
