Viennese coffee: features and recipes
Coffee has always been one of the most popular drinks. It is drunk in the mornings during the breakfast for cheerfulness or used as a light dessert during the dinner. Coffee is so widespread throughout the world that each country has its own unique recipe for this flavored drink.
Appearance history
In the middle of the XVIII century, coffee first appeared on the Venice market, and then spread to the UK and France. Coffee came to the neighboring states a bit later, and it was considered to be the drink of aristocrats. The rest of the population simply could not afford to spend money on expensive and “nasty bitter” drink - many, especially commoners, at first simply did not understand the taste of coffee. Even the high society was wary of the new-fashioned drink.
The first restaurant offering coffee to its visitors was opened in 1683 in Vienna. He was ruled by a former officer, the hero of the war with the Ottoman Empire, Yuri Kolshitsky. He was a Polish or Ukrainian by nationality.
A man lived for a long time with the Turks, studied their culture and, in particular, coffee. In the empire, this drink has long been a common product. Soon, Yuri left the Turkish state and moved to Austria, where he brought such popular coffee in the east. He even opened the cafe “House under the blue bottle”. In the city of Lviv preserved institution with the same name, which also serves coffee.
The officer resigned. A bag of coffee he got after the successful liberation of one of the cities from the Turkish siege. Yuri walked through the streets of Vienna and offered passers-by to try a Turkish drink.
At first, the new product was perceived negatively by society. Nobody wanted to drink bitter coffee. Therefore, Kolshitsky had to experiment with the drink, adding various ingredients (honey, nuts, spices) to reduce the bitterness and make the taste softer and sweeter. As a result, he managed to create a drink by combining milk and sugar in it, and the Austrians are accustomed to this option. Gradually, almost everyone began to drink coffee, and Yuri's things improved. His institution began to make a profit.
A little later, people noticed how the drink affects the body. Drink gave cheerfulness, so he was even more loved.
There is another interesting version, as it turned out in Austria. Armenian immigrants brought grain to the country and opened a coffee shop selling this overseas product. However, this version is not as believable as the first. In Austria, there is even a monument to Yury Kolshitsky, who brought a product to the country.
On the sculpture in the wall of the house where the coffee house once was, Yuri is depicted with a tray in his hands, on which there are small cups and a coffee pot. The man himself is dressed in Turkish clothing.
Yuri not only brought coffee to Austria, but even came up with a delicious recipe so that the drink was not bitter and could be drunk with pleasure. Traditional Viennese coffee is a combination of strong coffee with milk and sugar. This recipe came to mind in Austria and has been preserved to this day. Now this coffee has even been supplemented with new ingredients, turning the product into a complete dessert.
Types and methods of cooking
Viennese coffee has not only a traditional recipe, but also several types that are distinguished by their taste. Many barista have long added various sweet syrups, chocolate and cocoa powder to it. For lovers of spicy flavor came up with recipes with spices (for example, with allspice, cloves and cinnamon). Therefore it is worth getting better acquainted with each recipe.
Classic recipe
For the standard version, use ground roasted grains (35 grams), pure water (240 milliliters), milk (200 milliliters) and sugar (the amount depends on the desire to make a more or less sweet product). Also for cooking and serving the drink according to this method, you must follow some rules. First, the grains do not need to grind in advance, but immediately before preparing the drink. Next, the ground coffee is poured with cold water and put on a slow fire until boiling.
Coffee is brewed for some time, but not brought to a boil. Once the drink is ready, you need to leave it for a while on the stove. Milk or cream should be of high quality, with a high percentage of fat content (more than 33%), so that they can easily be whipped into a thick mass and not spread. Cream whipped to a dense consistency, and then milk foam with a spoon put on top of the finished drink. If milk is used for coffee, it is preheated. The brewed coffee is poured into a cup, and whipped cream is neatly placed on top.
If you move away from the classic recipe, you can add bitter chocolate to the drink, and sprinkle the finished product with spices, cinnamon or orange zest.
With whipped cream
For such a recipe, brewed coffee (400 milliliters), whipped heavy cream (100 milliliters), orange zest (2 grams), cinnamon (1 gram) and nutmeg (1 gram) are used. The cooking process does not differ from the classic look. The drink is boiled, then put the cream, sprinkling all the cinnamon, zest and nutmeg.
With chicory
For this drink take brewed coffee (200 milliliters), sugar (20 grams), cream (50 milliliters), powdered sugar (10 grams). Cream is whipped together with chicory and powdered sugar, which are then placed on top of coffee.
The drink is recommended to drink chilled.
With powdered sugar
The recipe consists of the following ingredients: ground coffee (20 grams), water (400 milliliters), cream 33% (200 milliliters), powdered sugar (100 grams), dark chocolate (40 grams), vanillin (to taste). The method of preparation does not differ from the previous options. Only the cream is whipped together with powdered sugar and vanilla, which are then placed on top of the brewed drink.
With spices
The composition of this recipe includes: coffee (600 milliliters), cinnamon (2 sticks), cloves (4 pieces), allspice (4 pieces), cream (50 milliliters).
With cocoa
The following ingredients are used for the preparation: coffee beans, sugar, cream, chocolate topping, cocoa powder, powdered sugar. The amount of each product depends on the desire to make the drink more sweet and vice versa. Grains are ground and mixed with sugar (6: 1 ratio). Then everything is poured and put on the fire to cook. When the coffee starts to boil, it is turned off and allowed to cool slightly. At this time, the cream is whipped together with powdered sugar. Half of coffee is poured into a cup or glass. From above put the cream, which is covered with chocolate topping and cocoa.
Viennese Melange
This is the easiest ingredient for coffee. For it, they use only the coffee beans themselves and about 200 milliliters of milk. Next, you need to prepare 2 cups. In one there will be brewed coffee, and in the other - hot milk. To prepare the drink, both ingredients are gradually poured into the glass, without mixing them.
How is the drink served?
Coffee also has its own separate ceremony, which has several differences from the tea. The drink is best served in a cappuccino cup, as it is high and the cream will not spread. Some barista advise to pre-heat a glass or cup. First, pour the brewed coffee drink (about half a cup). Milk is preheated to make it warm. Only then can it be added over coffee.
For lovers of sweet, you can make coffee with a variety of caramel and chocolate syrups. Cocoa powder is also used for decorating. It all depends on preference and fantasy. For decorations and more sweetness, you can add a cap of whipped cream, poured with some syrup, and sprinkle all the chocolate with crumbs or cocoa.
For gourmets, spices can be added to the drink to make the drink more piquant. Cinnamon, cloves and allspice are best.
Useful tips
Every Viennese barista and coffee lover has his own secrets, which help to improve the taste of the popular drink, making it more fragrant.
- About the very first recommendation has already been said repeatedly. Coffee must grind before brewing to preserve the taste of fresh beans. In no case can not use soluble powder, as by adding it, you can only spoil the entire drink. If you grind the grain in advance, you should store the finished product in a tightly closed jar so that no odors get into it. In addition, coffee you need to choose expensive varieties. Cheap analogues can greatly spoil the taste of the product.
- For cooking it is best to use only clean water. Failure to comply with this rule can greatly affect the taste of the drink. After all, tap water is not always sufficiently purified without harmful impurities and bleach content. You can take the usual distilled water, which does not have any nasty taste and smell.
- Drink should put a slow fire. Of course, the process of preparing the drink will last longer, but it's worth it. It will not burn, which may cause a bitter taste. If you do not know how to properly prepare a drink, a coffee machine can be used.
- In order for the grains to give even more flavor, a pinch of salt can be added to the Turk. It will perfectly set off the taste of coffee. Also, do not allow boiling liquid. If you notice that the coffee is about to start rising, then you need to quickly remove it from the fire for a few seconds and return it to the stove. This procedure will have to be performed several times. Therefore, while preparing an invigorating drink, you must always be near the stove. Otherwise, you can skip the process of boiling and spoil the drink.
- Instead of the usual sugar, many barista advise using cane. It well complements the taste of the drink.
In modern life it is difficult to imagine your day without a cup of your favorite coffee. It helps to wake up in the morning and stay relatively vigorous throughout the day. Viennese coffee is great as a dessert. Especially it may appeal to people who do not like the bitter taste in coffee. Cream makes it softer, and an abundance of sweet additives hides bitterness.
However, we should not forget that the fat cream and sweet additives contained in the drink make it high-calorie. If you adhere to proper nutrition, you can afford a cup of this flavored drink, but only in small quantities.
