Horse milk was first used in eastern countries by nomadic peoples who were engaged in breeding and grazing horses. Horse milk has a snow-white color with a light blue tint. It tastes pleasant, somewhat tart. Lactation in animals opens immediately after childbirth, and the peak of excreted milk falls on 2-3 weeks after that. After these weeks, the volume of milk decreases and disappears over time.
Foals are born sufficiently formed, and after a short period of time they begin to consume other feed, discarding mother's milk.
The product has many useful substances and is absorbed even by the stomach of a newborn child, however, the mares' milk has not received much distribution. This is due to a number of factors. The fact is that the udder tanks in mares are small, the milk in them accumulates in small portions. And given that in the first days of life, the foal comes to the udder up to 100 times, there is little milk in it. This imposes certain requirements on the frequency of milking. In addition, due to the peculiarities of the udder structure, the milking process is associated with certain difficulties.
Finally, it is also important that nutrients are contained only in the twin product (in the first 3 hours after milking), it is called saumal. In this regard, the transportation and sale of mare's milk, such as, for example, cow's milk, is impossible.
Today, Austria is the largest supplier of the product, and its benefits are spoken not only in our country, but also abroad. So, in China, 3,000 years ago, milk was considered sacred because of its healing properties.
Composition
Horse milk is considered to be a nourishing, dietary drink whose composition is similar to breast milk. The benefits of mare's milk are due to the peculiarities of its composition, which includes vitamins A, C, E, B1, B2, B6, B9, B12, as well as calcium, phosphorus, iron, copper, manganese, iodine, potassium, sodium. Caloric content is 40 kcal per 100 g. The product has a rather high carbohydrate content, about 2% of the composition is made up of proteins, which are easily digestible and contain a number of essential and non-essential amino acids.
Mare's milk in albumin content is 3 times higher than cow's. As part of the first there are 2 more types of protein - casein and globulin. These proteins are in almost all types of milk, but their ratio is different everywhere. In this regard, the milk from different animals and has different characteristics. So, the cow product contains more casein, which causes its heavier digestibility. Casein, in turn, is rich in phosphorus. In some cases, an overabundance is dangerous to health, it is primarily about babies. It is undesirable to give them cow's milk for several reasons (poor digestibility, inability of the kidneys to remove excess phosphorus). About 1.6% belongs to fats, and in Soamala they have a pronounced antibacterial effect and are represented by unsaturated low molecular weight fatty acids.
At different times of the year there may be a slight change in composition. So, in summer, milk contains more vitamin A. In the cold season, its amount decreases slightly, but the content of vitamin E increases. The fat content of milk is on average 2%, and the acidity level is almost neutral.
What is the use of saumala?
The mares' milk is used as a substitute for the maternal in the nutrition of infants, and on the basis of it they prepare mixtures for feeding. The product is suitable not only for healthy babies, but also for those whose body does not tolerate cow's milk.
Mare's milk contains a lot of Omega-3 acids.In addition, mare's milk has a pronounced immunostimulating effect due to the rich content of vitamins and minerals, especially ascorbic acid. According to the content of the last, the saumal significantly overtakes the cow, because vitamin C in it is 6-10 times more.
Due to the peculiarities of the composition, the product is useful for diseases of the digestive tract. The product normalizes the microflora, has an antiseptic and antibacterial effect. Saumal is used to treat indigestion, in particular, diarrhea in children, it helps to get rid of rumbling in the stomach.
Flatulence, belching, nausea after eating - all this is a consequence of digestive disorders. Caumal affects the cause of unpleasant symptoms, as well as directly on these symptoms. The mares' milk can be harmful in the only case - if you are individually hypersensitive to saumal or if you are allergic to casein or any milk protein in the composition.
If you prefer koumiss, then you should remember a fairly large amount of acids in the composition. This can aggravate the condition with increased acidity of the stomach. Refuse to drink should be in the acute period of diseases such as gastritis, ulcers, pancreatitis, as well as diseases of the liver, pancreas, kidneys.
The mares' milk should be drunk moderately, not exceeding the daily dosage.Starting to enter the composition in your diet should be with small portions, gradually increasing their volume in the absence of contraindications.
What is prepared from the mare's milk?
Only fresh milk is useful, after 3 hours there are almost no healing elements left in it. This makes it necessary to somehow process the product. The easiest way to preserve the taste and benefits of saumal is to freeze it. In general, this process is similar to freezing goat milk.
Fresh milk should be quickly cooled (on how well it will succeed, depends on the shelf life of the frozen product) and pour into clean plastic bottles or bags for freezing the liquid. The latter should be pre-sterilized.
Now you need to remove the container in the freezer, where they can be stored for several months. If possible, set the lowest possible temperature in the freezer.
It is necessary to pack the product in small portions in order to defrost the daily dose. Repeated freezing and thawing are not allowed. Thawed fresh milk should be in room conditions, boil it after that is not necessary.
On the basis of Saumal, you can prepare several other drinks, the most famous of which is koumiss. It is a fermented milk product, the medical properties of which are confirmed by the direction of medicine - kumis treatment, and even the existence of sanatoriums and clinics practicing the active use of koumiss for healing various ailments.
Kumys has a beneficial effect on the microflora of the stomach, contributing to the inhibition of pathogenic flora. It is actively used to treat tuberculosis, and the composition of the vitamin richness is not inferior to the mare's product.
It is made from fresh milk and koumiss ferments. In the absence of these ingredients, it is possible to prepare a drink from sour milk (1 l), a cup of warm milk and dry yeast (3 g, plus a quarter cup of warm water is required to dilute the yeast). You also need 1 tablespoon of honey and granulated sugar.
In water with sugar, you should dilute the yeast, wait for the time required for their activation (usually indicated by the manufacturer of the yeast, if there is no information, then 15-20 minutes). Mix milk, a glass of water and honey, and then add to them the diluted and "revived" yeast.
The composition is distributed in bottles and leave in room conditions for an hour. As soon as white foam starts to stand out on the surface, bottles with koumiss should be transferred to cold water, where they should be kept for 3 days.
How to use?
The optimal dose of horse milk and products based on it for an adult with no contraindications is 250 ml. This dose should be divided into 2 doses - morning and evening.
Eating it is most beneficial on an empty stomach 30 minutes before a meal, always warm. To achieve a positive effect mare's milk should be drunk regularly for 1.5-2 months. Then you need to take a break for 1.5-2 weeks. Experts say that at the first use of the product may be some relaxation of the chair, which is considered a normal reaction. Already after 5-7 days, the stomach will adapt to the new product and the state will normalize.
If you drink koumiss, then you need to start from 100-150 ml before or with food. After 2-3 days, you can bring the daily dosage to 2-3 glasses, and then 1-2 liters. Naturally, the drink should not cause allergies or deterioration of health.
Since koumiss tones up and slightly stimulates the nervous system, you should not drink a drink based on saumal before bedtime.
