Not only the villagers are returning to the use of this wonderful product in cooking, but the citizens also increasingly began to cook ghee at home. The home-made butter is very different from the one sold in supermarkets. In the home product completely absent any additives and preservatives. And it is worth noting that properly cooked ghee can be stored for up to a year even without a refrigeration unit. But few people thought about what kind of product it really is and how to prepare it.

What it is?

Melted butter - pure 100% milk fat. This product can be prepared in several ways, but more on that later. For now we will sort its useful and harmful properties.

Ghee is obtained by melting butter over low heat for quite a long time. Surprisingly, with all the fat content and calorie content, ghee is a very useful product. How to melt the butter in a saucepan?

You can get a quality product by melting the oil on a gas or electric stove.

  1. To begin with, choose from the entire dishware the one whose walls will be the thickest (not only from aluminum, the oil burns in it). This is necessary so that the melting takes place evenly.
  2. Then take the butter of the biggest fat content, ideally homemade (rustic) cow. But if there are buffaloes, then it will do. Cut the butter into small pieces or skip, slightly frosting, through a meat grinder.
  3. Then put everything in a saucepan and put on a slow fire.
  4. When the oil begins to melt, a characteristic foam will appear on the surface. It must be removed with a slotted spoon. This exfoliates all harmful impurities and unnecessary waste (buttermilk). A precipitate will form on the bottom, so stirring should be done carefully so as not to stir.
  5. When the oil begins to lighten and become transparent, we can assume that the work comes to an end.

The whole process will take an hour and a half. Do not forget to constantly remove the foam. When it stops forming and ghee becomes amber, you can set the saucepan aside from a fire. Allow the oil to cool slightly and gently, trying not to stir the precipitate, pour the finished product into a clean storage container.

How to cook in a slow cooker?

Of course, with the advent of technical progress in our kitchens, the slow cooker became the main helper of the hostess. This wonderful unit and cream ghee can cook. It is only necessary to follow a certain sequence of actions, which now we will talk.

  1. We take the bowl from the multicooker, finely cut the butter there with a high percentage of fat.
  2. Put the slow cooker in fire mode and drown the oil. Do not close the lid.
  3. After the oil gets darker, reduce the mode to 100 degrees. It is necessary to melt it completely, for this we weary for two or two hours and a half. Regularly remove the foam skimmer with small holes.
  4. When the oil gets honey-yellow color, it will be a signal of its full readiness. Carefully remove the bowl, without shaking the sediment, and filter our oil through a colander covered with a layer of gauze. We do everything extremely carefully, not forgetting that this boiling oil and burns can be very painful.
  5. Spill on clean dry dishes with a wide neck so that it is convenient to get when the oil hardens.

Oven Cooking Recipe

The process of cooking ghee in the oven is not much different from other ways. But there is a significant advantage: you do not need to be around all the time, watching that the oil does not start to burn (as is the case with the pan). And you do not need to remove the foam all the time (as in the case of the multicooker). But still in this way there is a minus. It is very time consuming. It may take three, four hours.

  • we heat the oven to 150 degrees, at this temperature we will heat the product;
  • chop finely butter into pieces, you can, slightly frosting, grate on a coarse grater;
  • we lower in a wide dish (suitable for dishes made of heat-resistant glass or clay);
  • close the oven;
  • care must be taken to ensure that the temperature in the oven is stable;
  • waiting for three hours.

When the oil gets a shade of burnt amber, it becomes transparent, the product can be considered ready. We get out of the oven, again carefully, as the dishes become greasy and slippery. Remove the foam, which is even more like a crust. Pour the product into a dry dish.

How to make a microwave?

The process of cooking ghee in the microwave is different from the previous ones and occurs in two stages. First you need to decide which of the modes of the kitchen assistant is responsible for maintaining the 100-degree temperature. Many units are differently called categories of temperature regimes. Most likely, it will be "defrosting".

Further, all in a permanent pattern. You need to take the product with the largest percentage of fat, cut it into pieces and put in a dish for the microwave, the appropriate size. Taking into account the fact that there is a margin of two to three centimeters up to the top edge. Dishes should be made of heat-resistant glass.

Select the mode of 100 degrees and turn on the microwave for five minutes. Open, look. If the ghee began to burn, then we continue the procedure, if not, then we need to increase the temperature. Storage

Save ghee for a long time is not difficult. In hermetically sealed containers properly cooked, that is, without protein foam and with well evaporated water, without sediment, it can be stored for more than nine months at room temperature in a dark place.And in the refrigerator it is stored at all for more than a year, or even two. In India, it is even believed that the older the ghee, the more useful it is.
