Due to the unique composition of soybean oil has been widely used in cooking, and in folk cosmetics is one of the first places. What it is?

Soybean oil refers to the type of vegetable oils. It is a liquid transparent product with a shade from yellow to brown and with a characteristic odor. Eco-friendly, has no synthetic analogues, is absorbed by the body by 98%.

Modern industry produces products produced in two ways.

  • Pressing is a mechanical production method. The oil produced in this way has several advantages: it contains more vitamins and microelements, but it has a pronounced sharp odor and a short shelf life. Cold-pressed oils are not recommended for heat treatment. At high temperatures, the nutrients are destroyed.

Double pressing is one of the most popular ways to produce soy extract. It allows you to maintain the beneficial properties of the original product without chemical exposure, which significantly increases its useful qualities. Cold-pressed oil is considered to be the most useful, but not everyone will like its smell. More often it is used as a food additive or for cosmetic purposes.

Soybean oil accounts for 70% of all produced vegetable oils in the world. It is most common in China, Japan, and the USA. In most Asian countries use it on a par with sunflower and corn.

Types and composition

Depending on the production method, the oil is divided into:

  • refined;
  • deodorized;
  • refined deodorized;
  • unrefined.

More often it is used as a food additive, for the production of margarine, mayonnaise, non-dairy cream, widely used as a preservative and stabilizer in the production of canned food, for freezing food products.

In the production of crude soybean oil does not use chemical solvents and catalysts. It is an environmentally friendly product, rich in vitamins, phospholipids, phytosterols and organic acids. It is a natural antioxidant, used in cooking, diet and cosmetics. This is a great addition to salads, it is indispensable for the nutrition of athletes, but is unsuitable for culinary processing. On this oil, it is not recommended to extinguish or use it for deep-frying. Unrefined oil when frying burns, foams and smokes, in addition, it produces toxic and carcinogenic substances.

Refined deodorized oil by the number of useful elements is significantly inferior to unrefined. It is used for cooking. It is used when frying, for baking bakery products, making homemade mayonnaise. It does not burn, has almost no odor, is resistant to high temperatures, emphasizes the taste of vegetable salads, gives a rich savory flavor to fried, stewed dishes. The oil is able to retain its qualities and aroma for several months if properly stored.

Refined non-deodorized oil is used for industrial purposes, and the hydrogenated oil undergoes a special treatment, as a result of which the tendency to the formation of bitterness is reduced. The cause of rancid are unsaturated fatty acids, which, upon contact with air, acquire a bitter taste. During the hydrogenation process, the oil is heated to a high temperature followed by the addition of a catalyst and hydrogen. After careful filtration, a hydrogenated product with a characteristic dense texture is formed, which is important in the production of solid fats. Soy extract significantly exceeds the composition of sunflower, rapeseed and flaxseed oils. Its caloric content is 899 Kcal, fat - 99.9 g, water - 0.1 gram.

Soy extract is a real record holder in the content of lecithin, which is extracted from fatty acids. Fats of soybean oil are polyunsaturated fatty acids, half of which is linoleic, and 25% is oleic. Stearic fatty acid is 6%, and palmitic by 5%. The saturation of fat in 100 g of the product contains:

  • polyunsaturated fat - 58 g;
  • saturated fatty acids - 16 g.

  • with intolerance to individual components of the product or allergic reactions to soy protein;
  • lactating women in the first half after the birth of the child due to the high content of estrogen in the composition of the product;
  • with intense paroxysmal headaches, expressed long migraines;
