What it is?

Kurd is a legendary English dessert, which is an egg-oil based air cream. Traditionally, it is prepared on the basis of lemons, but then, no one has canceled the experiments. Therefore, we offer you a few step-by-step recipes for preparing the most delicate raspberry Kurd, which will certainly appeal to guests and home.

Classic recipe

Prepare 2 chicken eggs in advance, about 40 grams of powdered sugar and butter, 150 grams of fresh raspberries.

Now put the berries in a small saucepan, put on the fire and bring to a boil, stirring constantly the contents. After that, make the fire minimal and leave the container on the stove for another 1 minute. Then - wipe the resulting mass through a fine metal sieve to remove the stones. After - again pour the raspberry puree into the pan and use a whisk to beat in it 1 egg and 1 yolk.

Next - add butter and icing sugar. Beat the mash thoroughly until smooth. Then - put mashed potatoes on the stove and cook over low heat, stirring continuously, but do not bring to a boil. It is only necessary to slightly thicken the Kurd. Now it remains only to once again pass the mashed potatoes through a sieve to achieve the perfect consistency of dessert. Done!

You got 200 milliliters of delicious flavored delicacy. If you want to save it until a certain time, then pour the Kurd into a jar, close tightly, cool and refrigerate.

So it can be stored for up to two weeks. Or you can immediately enjoy this dessert, just do not forget to cool it beforehand.

Option number 2

This option of cooking Kurdish raspberries differs quite a bit from the previous one, since all the recipes for such an English delicacy are similar. However, this option may be more suitable for you.

You will need:

  • 200 grams of raspberry;
  • 2 tablespoons (with a hill) of sugar;
  • 2 chicken yolks and 1 protein;
  • lemon juice or acid to taste;
  • 70 grams of butter.

Mix whites, yolks and sugar with a mixer until a thick foam is obtained (2-3 minutes). Then sort out the raspberries, rinse them and place them in a non-stick dipper. Mash the berries with a fork, add lemon juice. Place the container on the fire, bring the potatoes to a boil.

Then, reduce the heat and torment the contents of the bucket for about 5-7 minutes. After that, pour in eggs raspberry puree whipped with sugar. It is important to stir the mass intensively with a whisk or fork so that the eggs do not cook. Leave the cream on the fire for another 5 minutes to thicken. Its texture should not be too thick, but not too thin. Ideally, the Kurd is similar in consistency to jelly.

Wipe the puree through a sieve, add butter, and then thoroughly stir the mixture until smooth. Cover the bowl with dessert cling film and place in a cold place for about 30 minutes. So the cream will become a little thicker and tastier.

Preparing such a dessert is not at all difficult, but the result will exceed all your expectations.

Tips on drinking

    Raspberry Kurd will be a great cream for cupcakes, macaroons (pasta - French delicacy of proteins, sugar and almonds), cakes or buns. And also for delicate curd desserts. Alternatively, it can be served purely for coffee and tea for breakfast.
