- Gooseberry "Senator" has a thick "cap", has no thorns. The berries are quite large, weighing up to seven grams. Kohler is usually burgundy or dark green. It is impossible to transport berries for long distances, it has a very thin skin. Well make jam, almost no bones. Plants in the first years practically do not give fruit, but then the yield increases sharply.
- Gooseberry "Belarusian sugar" differs in berries of a round form about 9 grams. Their incredibly juicy and original taste is perfectly used in cooking. Despite the strong spinousness of the shoots and the relative small-fruitedness of the berries, this gooseberry variety is loved precisely for its sweet taste.

Paste
The taste of gooseberry fruit candy is moderately sweet, with a sour taste. You can make the product at home, it is easy to prepare such dishes. Pastila is made from such products:
- bee honey;
- granulated sugar;
- egg white.
Kohler dishes can be very different:
- burgundy;
- with a reddish tinge;
- dark green.
The first is prepared mashed gooseberry. It is important to select ripe berries. Gooseberry has a thick peel, immature berries are not suitable for creating such a product. Gooseberry rinsed, left in a colander for some time, the water should drain. Cut berries, add some water to the bowl, stirring the berries, make a fruit “porridge”. It is very important that there are no lumps. Then put the container with mashed potatoes in the oven, stew the product for thirty minutes over low heat. After cooking, put it on a sieve, fray to a uniform consistency.
There is also another way that is commonly called natural.. If the weather allows, you can dry the product in the fresh air. To do this, the prepared substance is distributed on trays, which are covered with wax paper or foil. Content is placed in front of the house on wooden flooring, for several days the product is blown by the wind, baked by sunlight and so “fit” to the desired condition.
It is also important to ensure that the pastila does not dry out, otherwise it will lose its taste.
Dry the pastilles in an electric drier and oven, for this, the composition is evenly distributed over a deep pan (3 cm), then turn on a slow fire. Temperatures of 85 degrees is enough to cook everything as it should be. Pastille can also be made without sugar, for this is taken on one kilogram of berries 1/3 kg of honey. Then the whole cooking algorithm remains the same. Honey is added after the cooked mass has thickened, and its temperature does not exceed 55 degrees Celsius.
For another recipe for gooseberry marshmallow with honey you will need:

- honey - 300 grams.
Puree "languishes" on the smallest fire until, until it reaches a thick consistency. Then the contents are left for an hour until the dish is warm (45 degrees is enough). Add honey, mix everything thoroughly. Drying takes place outdoors, without using any equipment.
Similarly, you can make a paste of gooseberry with the addition of egg white. Substance is boiled over low heat until it thickens. Gradually add sugar (1/3 kg per kilogram of berries), while continuing to stir the contents. Separately, they make a “eggnog” of egg white, whipping it to white foam, which has good density. If the substance becomes homogeneous, protein is added, the entire contents are mixed using a mixer. Store the product in sterilized jars in the refrigerator. They also put the product in a sealed bag.
Cooking smoothies
The gooseberry contains a huge amount of valuable vitamins and minerals. To support immunity in the cold season, after drinking a fruit drink or smoothie, this means strengthening the resistance of the whole organism. Such a product is an excellent preventive measure against colds. Moreover, it is prepared quickly, the process takes a minimum of time. Often, gooseberries are made in combination with black currants, in which there is a huge amount of vitamin C. What is useful in smoothies with black currant:

- sugar - 1.5 kg;
- water - 1 liter.
