Since ancient times, Russia has been preparing an exquisite and very sweet delicacy - marshmallow.Initially, it was made from apples, however, over time, the recipe was significantly expanded, and the basis of the dish was made up of a variety of berries and fruits - gooseberry, currant, plum, and even bird cherry. The most unusual and original dessert is strawberry marshmallow.

Berry preparation

To get a tasty and fragrant candy, it is very important to choose and prepare strawberries correctly. The sweetness of the berry is of fundamental importance, since the taste of the final product will directly depend on this parameter. Experienced pastry chefs recommend using slightly over-ripe berry, and avoiding unripened berry, as it can add unnecessary marshmallow pastila.

Pay attention to the presentation of the raw material - if the strawberries are too large, this in most cases means that they used to grow many different nitrates and growth stimulants, or simply filled them with water. In the first case, the berry can cause harm to the body, and in the second - to be tasteless. Of course, this does not apply to varieties that are initially distinguished by berries of large size. For example, if you are cooking a sweet dish from Victoria, you can not worry about the size of the berries, this variety is famous for its large fruit.

Rotting and moldy berries are not suitable for marshmallow, because the fungus in them can cause serious diseases in humans.

Keep in mind that the color of the final product and saturation depends largely on the color of the strawberry itself - the brighter the better. However, remember that the shade must be natural, otherwise there is reason to suspect the use of chemicals in the cultivation of raw materials.

It would be nice to smell the product - the more fragrant the berry, the better and more appetizing the candy will be at the exit.

Before preparing the dish, it is necessary to soak the berry in cold water for 10-15 minutes, thus, most of the stuck dirt settles to the bottom. After the specified time, you need to get a strawberry with a slotted spoon, put it in a colander and rinse again, this time in running water.

Important: the stalk should be torn off only after washing, if this is done earlier, the strawberries will become watery and tasteless.

Technology

Pastille at home is produced from strawberries crushed to puree consistency; for this purpose, blender is most often used. If it is not, you can use a meat grinder or an ordinary tolkushka, although in the latter case you will have to work hard. To make the product more fragrant and sweet, add sugar, some vanilla, mint leaves and, if desired, lemon zest, to the prepared berry mass.

The prepared mixture of products in a thin layer spread on parchment paper and dried until ready.

A fairly convenient gadget for preparing such a dish is the electric dryer - today on the market you can buy a variety of models for drying vegetables, berries and fruits. Many of them are even equipped with special pallets for sweet plates. However, if such a tray is not provided, then it is quite possible to make an analogue of your own hands from simple baking paper.

The production of marshmallow in a similar dryer occurs, as a rule, in 20 hours, while the temperature is set at 70 degrees.

If there is no drying at home - it does not matter, you can make a pastille in the oven. So that the berry mixture does not stick to the pallet, it is covered with vegetable oil and covered with parchment. After that, preheat the oven to 80-90 degrees and place the billet there for 7-10 hours.

In the electric dryer

To prepare an appetizing pastille in a dryer, you will need:

  • 1.5 kg of berries;
  • 200 g of sugar;
  • 80 ml of vegetable oil.

From this amount of ingredients, 0.45 kg of pastila is obtained.

Berries must first be sorted, sorted out damaged and unripe fruits, washed and left on a paper towel for complete drying.

When the strawberries are completely dry, you should take away the sepals, and then grind to a state of mashed potatoes - this can be done by any method convenient to you.

Pour sugar into the prepared mass, mix and leave for 30-40 minutes so that the refined sugar is completely dissolved, and after that it is necessary to mix again so that the consistency becomes homogeneous.

The tray used for pastes should be oiled thickly and pour about half of the berry puree so that the mass does not fall into the hole located in the center - in this case, the equipment can be damaged. The mass should be leveled with a spoon.

If your dryer has several pallets, then the rest of the mixture can be put on the second, if the system assumes the use of only one, then the preparation of the dish will be carried out in several batches.

Turning on the device, it is necessary to activate the mode corresponding to the drying of liquid products, the temperature must be maintained at around 50 degrees.

In these conditions, the pastille will have about a day. However, it may be ready before, so you need to check it periodically. If it is easily separated from the pallet and does not begin to stick to hands, then you can turn off the device.

Each plate must be cut into 5-6 pieces and rolled up into a tube, then put into a sterilized jar, tightly closed with a plastic lid, and stored in a cold place.

In the oven

A pretty tasty candy is made in a regular oven. to create it will require:

  • 1 kg of berries;
  • 200 g of sugar;
  • juice of half a lemon;
  • vegetable oil.

Peeled and dried strawberries must be minced, squeezed in the resulting mashed lemon juice, add the refined sugar and mix well.

From this amount of ingredients, the dish is prepared in two runs, that is, only 1/2 of the prepared mass is put on the parchment in a thin even layer.

Pastille is prepared in a preheated oven, as a rule, it reaches readiness in 10 hours, although after 3 hours it is necessary to periodically check its consistency.

Finished platinum must be cooled, cut into strips with a sharp knife or scissors, and rolled into rolls along with paper. To store such marshmallow should be in the refrigerator, before cooking it rolled out, removed the parchment, and again rolled into a roll.

Cold marshmallow recipe

A rather unusual candy can be obtained in the refrigerator.

To cook it, you should take:

  • 100 g of strawberries;
  • 200 ml of water;
  • 3 egg whites;
  • 50 g of honey;
  • 40 ml of lemon juice;
  • 200 g of sugar;
  • 10 g of gelatin.

First you need to fill in the gelatin with water and let it swell, then warm it up in a water bath until completely dissolved.

The berry is peeled and ground to a state of mashed potatoes, mixed with sugar and melted honey.

The egg whites are separated from the yolks and whipped with powdered sugar (about 20 g of powder is required), after which the protein mass is mixed with the berry one and gelatin is injected.

All components are thoroughly mixed, filled the cooked silicone mold and sent to the refrigerator for 12-14 hours.

Such strawberry pastila is obtained very fragrant, tasty and tender, however, this recipe is not suitable for prolonged storage - it should be eaten within a few days after preparation.
