Cooking strawberry compote
Strawberry - the queen of summer among the berries. Her sweet taste and delicate aroma is familiar to everyone without exception.Today, there are many varieties of strawberries, thanks to which you can feast on juicy ripe berries throughout the summer.
The only disadvantage of this berry is a relatively short shelf life. Therefore, strawberries are often consumed fresh, canned and frozen.

Recipes
There are many types of cooking strawberries. Compote - the original and practical way available to everyone.
Canned compote
You will need red, juicy, ripe, but dense berries. They must keep their shape well in order to be preserved during cooking. First of all, strawberries need to sort out, leaving only the good, intact specimens, remove the "tails" and how to rinse. It is very important in the washing process not to injure the flesh of the berries. It is best to do this in portions, washing them in cold water with a colander.
For 10 half-liter cans you will need:
- 3 kg of berries;
- 2 liters of water;
- 600 g of sugar.
Cooking
Strawberries are poured into previously sterilized clean containers, filling no more than 2/3 of the volume. Next, you need to boil water with sugar until a sweet syrup is formed. Not cooling the syrup, you need to strain through cheesecloth and can be poured into banks.
Banks tightly closed with clean tin lids. Special clamps can be used, as they often break under pressure. If there are no clips at hand, you can simply cover with washed lids.
The next stage is sterilization. To do this, you will need a wide pan with hot water, at the bottom of which a grate or a circle made of wood is placed at the bottom so that the banks do not crack due to high temperature.
Pot with banks sterilized for 10 minutes over medium heat. After which they should be removed, capped, wrapped and put to cool on a flat surface, turning upside down.
Strawberry compote without sterilization
For one 3-liter jar you will need:
- 800 g strawberries;
- 2.5 liters of water;
- 1-1.5 st. Sahara.
Cooking
Strawberries should be prepared, sorted, processed and washed under running cold water. Banks are filled with berries at 1/5 volume. A pot of pure water is put on the stove and brought to a boil. Hot water gently poured berries. After that, the neck of the cans is covered with clean lids and left alone for 15-20 minutes, so that the berries should be soaked and the water cooled.
Next, the distilled water is poured back into the pan, put on the stove and bring to a boil. Add sugar according to the recipe and cook until it is completely dissolved. Sweet syrup is poured over the banks and rolled them. After the banks are sure to turn upside down and leave to cool under a warm blanket.
Strawberry and orange compote
For one 3-liter jar you will need:
- 700 grams of strawberries;
- 300 grams of sugar;
- water.
Cooking
Fruits need to be washed, processed strawberries and fall asleep in sterilized jars. Cut the orange into thin slices and fold into jars. Next, the contents of the cans are poured with boiling water and left to be absorbed for about half an hour. After the water is gently poured into the pan, add sugar and put on the fire. Boil should be for 5 minutes before the formation of syrup. Sugar should be completely dissolved. The resulting mixture is poured back into the banks and cork them. As usual, banks are wrapped and sent to cool in a dark place, exposing them upside down.
If desired, fresh strawberry compote can be made by adding other berries to taste. For example, a particularly sweet and original taste of the drink is obtained if you add cherries, raspberries, cherries or blueberries.
Many people know that strawberries go well with rhubarb. Compote of these ingredients has become a real classic. It quenches thirst well and saturates the body with vitamins.
Strawberry compote in a slow cooker
Preparation of compote in this way is slightly different from the classic. It is best to cook with the lid open - the water will not boil so hard, and the drink will be more transparent.
You will need:
- 300 grams of strawberries;
- 100 grams of sugar;
- 2 liters of water.
This is a fairly quick and affordable recipe for making fresh compote. Berries need to sort, process and wash. Strawberries are poured into a multicooker bowl, sugar is added and poured with water. For boiling compote, the “Quenching” or “Milk porridge” mode is suitable, and it takes about one hour to prepare a drink.
After the set time has elapsed, the multicooker lid can be lifted, but do not rush to transfer the drink. It should cool and insist. You can cook from fresh berries, and in winter, it is permissible to use frozen strawberries. When properly frozen, all the nutrients remain in the berries, moreover, the taste of this compote is just as good.
Serve compote can be warm or chilled, with and without berries.
How to use
Ready canned drink is usually served on the table without berries, after having filtered it, as when boiling the strawberry loses its aesthetic appearance. However, the taste qualities remain with her and eating canned berries is no less useful. In summer you can drink the drink at once still warm, or you can chilled. Sometimes mint, ice cubes, lime are added to it - a refreshing cocktail is obtained.
For a more original presentation, you can experiment with lemon and orange juice, ginger root, vanilla extract. In any case, the taste of compote will not spoil it, but, on the contrary, will add zest.
Useful tips
In the preservation of compote, as in any case, has its own nuances:
- berries on the compote need to select the whole without a single defect with dense pulp, but they must fully ripen;
- special attention should be paid to washing the berries. This should be done carefully, trying not to crush them;
- strawberries are best taken medium sized. Large berries can be cut in half;
- If you pour berries with cold water, the compote will turn out to be a bright color. And when pouring hot drink taste will be more intense, but the berries will boil dry;
- a slice of lemon or a small pinch of citric acid makes the color of the drink brighter;
- when cooking compote, it should be remembered that in the process of cooking strawberries take away some of the sweetness of sugar. To make the drink sweet enough, it is recommended to stick to the recipe;
- if desired, instead of sugar, you can take a sweetener or honey. It is also allowed to add all sorts of spices to the drink;
- you need to prepare compote only from fresh berries;
- It is equally important to qualitatively sterilize the jars for about a quarter of an hour in the oven or steamed.
