Species difference
Green beans are eaten whole. Asparag bean is one of the varieties of chilli, so it is similar in color and visually, but has a more delicate texture. Its name is obliged to taste, reminiscent of asparagus. There are no hard plant fibers in its “shoulder blades”.
The cog variety is eaten only after heat treatment, but asparagus can be eaten raw.
Not any beans are suitable for cooking. You should not experiment with the preparation of immature pods of grain varieties. Delicious dishes are obtained from sugar and semi-sugar (vegetable) varieties. They have delicate leaf pods and small soft grains.
Criterias of choice
The most delicious are light green or pale yellow pods of slightly curved shape. You can check their quality with your fingers: the pods should be tight to the touch and easily break in half. When choosing pods, they will also correctly focus on the degree of their maturity. For one dish should take the same pods. Yellowed pods are not suitable for food, so they must be thrown away.

- put the pods in it and add some salt (about 10 grams of salt will be needed for 1 liter of water);
- cook over low heat, do not mix;
- discard the finished product in a colander;
- “Bathe” in cold water, which will keep the bright green color and prevent softening.
Add your favorite spices, butter - an independent dish is ready.
Cooking on fire is ideal, because in the process of cooking you can always taste the product and decide to stop or continue cooking. By the way, excess cooked beans can be frozen.
If you want to cook the beans for a couple, but there is no special fixture, then pour half a liter of water into a regular saucepan and boil. Then put a colander with beans in a saucepan and cover with a lid. For 5-7 minutes, the vegetable will reach readiness.
Cooking in a double boiler will take up to 15 minutes. Put the beans in 1 or 2 layers in the capacity of the double boiler, pour water into the water compartment in accordance with the instructions to the apparatus.
To cook in a microwave oven, pour hot water, put vegetables, salt and close the lid in a microwave oven. The holes in the lid should remain open. Cook at maximum power for one minute. If this time is not enough - run another half a minute. If the beans were poured with cold water, the time should be increased to 2.5 minutes.
To cook in a slow cooker, pour water into a container, lay out the beans and start the “soup” mode for 7 minutes. In some models, this mode is called "cooking".
Sometimes fruits are prepared in a sealed container and in a small amount of salt water. Then they do not drain the water, but add oil, spices and greens directly to the pan, mix, transfer to a deep bowl and serve it.
