Sweet Cherry Compote: Properties and Recipes

- Sweet cherry is a rather sweet berry, therefore less sugar is added to canned juice than, for example, cherry or currant drinks.
How to cook?
To prepare a delicious and fragrant sweet cherry compote, there are several recommendations.
The first thing you need to cook and wash well jars, which will be your fragrant drink.
To do this, they are sterilized in various ways.
- In the oven. 1 liter cans are usually sterilized for about 15 minutes, 2 liters for about 25 minutes, 3 liters for about 35.
- On the steam bath. Time sterilization is the same as in the case of the oven.
- In the microwave. The disadvantage of this method is that three-liter jars cannot be sterilized because of the small size of the device. Small jars are filled to a third with water, put into the oven and turn on the maximum power. Sterilization time - 5 minutes.
In the second phase of cooking it is necessary to process the caps.
For this:
- lids made of metal for screwing with a typewriter need to be boiled in a saucepan for a couple of minutes;
- spiral covers are cleaned with soda, then put in boiling water for a couple of minutes and dried;
- wipe products with medical alcohol.

Composition:
- fresh sweet cherry - 500g;
- boiling water - 2.5 liters;
- sugar - 1.6 kg per can of 3 liters.
Place the sweet cherry on the bottom of the jar. Meanwhile, mix the water with the sugar and boil a little. The resulting mass is poured into the cans to the very top and pasteurized for 20 minutes. Then roll up. There is a possibility that by this time the water will evaporate a little, you can add boiling water. After that, the jar is turned upside down in order to ensure the tightness of the twist, and cover with a towel until it cools. The next day you can put the finished product in a cold room.
Important: if you use spiral covers, then you should not turn them over, it is better to set aside and cover with a towel.
You can make canned compote without sterilization. At the first stage, it is required to wash and dry the cherries well. Fill it with about a quarter of a jar and fill it with boiled, hot water with sugar, close the lid. Leave for 15 minutes. Next, pour the resulting syrup into the pan and bring to the boil again. After that, remove from heat and pour on the banks on the neck. The next stage is a twist and turn upside down.
If you do not really like the sweet taste of cherries, you can add a little lime or lemon. Then the drink is saturated with sourish taste and will not be too cloying. To do this, citrus need to pour in boiling water to remove from it all the harmful microorganisms.
For winter
There are several ways to prepare sweet cherry compote for the winter.
With sterilization
Ingredients:
- sweet cherry berries - 2 kg;
- sugar - 400 g;
- water - 3 l.
The first step is to sterilize all the jars in which you will close the compote, and boil the lids. We touch all the berries and leave only the whole, without damage. Thoroughly wash and dry.
Next, prepare the syrup. We mix sugar with drinking water in an enamel saucepan, bring to a boil. At the next stage, add the resulting liquid to the cherry, which was previously laid out on the banks to the top. Next, this container is required to put in a large container with hot water and cover with lids.
This is another sterilization step (for a volume of 0.5 l cans, 15 minutes is required, and 1 liter is 25 minutes). Then take it out of the water, twist it and turn it upside down. Wait until cool, then you need to cover with a towel. This is the last stage of preparation.
Without sterilization (3 liters)
Composition:
- sweet cherry berries - 450 g;
- sugar - 350 g;
- water - about 2.6 l;
- citric acid - half a teaspoon.
This method of preparation differs in that it is produced without sterilization. To do this, you need clean jars (do not wash with dishwashing detergent, rather soda). We take our fruit and put it in a container, top it with boiled water, leave it for 10-15 minutes under the lid.
Next, separate the water from the cherries, add a little citric acid along with sugar and boil a little. You should have a sweet and sour syrup, which should fill the left berries to the very neck. To twist a can with a cover and turn over. Cover with a towel and wait until the compote has cooled completely.
To drink immediately
In the summer, you can eat fresh sweet cherries, and you can make a summer cooling drink from it. It turns out very useful and nutritious infusion for both adults and children.
To make sweet cherry compote, without canning, you will need:
- sweet cherry berries - 500 g;
- water - 3 liters;
- sugar (to taste) - about 5 tablespoons;
- red currant - 150 g (or 50 g of any citrus).
Carefully wash the berries with cold water, remove the tails and leaves. Put the water on the stove and bring to a boil.Then reduce the capacity and put the berries in boiling water with citrus or currant, boil for 10 minutes. Next, add sugar to taste, close the lid. Let the sweet cherry reveal a little taste. Then cool with ice. Delicious, fragrant drink is ready. Some add a little mint at the end for freshness.
With various ingredients
There is a huge number of options for making compote from sweet cherries with the addition of various ingredients.
With strawberry
For this you will need:
- Cherry berries - 350 g;
- strawberries - 300 g;
- sugar - 250 g;
- drinking water - 3 l.
The recipe for cooking canned mixed fruit is no different from the one that is brewed purely from cherries. The only difference is the addition of additional berries.
But in the initial stage, for this recipe, you should carefully wash the strawberries, otherwise the remnants of dirt on this fruit will cause the jar to explode. We also recommend using only homemade variety.
With cherry
Composition:
- sweet cherry berries - 200 g;
- fresh cherry - 200 g;
- sugar (to taste) - about 150 g;
- ½ tsp citric acid;
- water - 3 l.
Put 1: 1 berries into clean jars. Fill with boiled water and leave for 17 minutes under the lid. Next, pour the water into the pan, and boil again with the addition of sugar and citric acid. The resulting syrup is poured into jars of fruit just below the neck, twisting and turning. Cover with a blanket and wait for complete cooling.
With apricots
Composition:
- sweet cherry berries - 300 g;
- fresh apricots - 300 g;
- sugar - 150 g;
- water - 3 l;
- 1/2 citric acid.
We recommend to remember that very ripe apricots fall apart during sterilization, and those who have not yet had time to ripen, are characterized by tartness and bitterness to taste. Therefore, you should carefully select these fruits before cooking canned compote. Put apricot and sweet cherry 1: 1 in a sterilized jar and add sugar with citric acid, then pour boiling water over it.
Cover all with a sterilized lid and put the workpiece in a pan with hot water. At the next stage, it is required to make sure that the berries begin to change their color, then after 1 hour they can be removed and rolled up. There is another method for determining the readiness of the cherry product. Fruit float and begin to separate from the skin.
How to store?
The shelf life of a homemade spin is rather long and usually undemanding to special conditions. After your home canned compote is ready, it does not need to be sent to the refrigerator. It is also not recommended to leave it in direct sunlight.
Some storage rules should be followed.
- Temperature range up to 22 degrees.
- Before sending conservation to her place of residence, it is necessary to follow her for some time. There are signs that indicate that sterilization is required repeatedly - this is the appearance of bubbles, the presence of muddy water or accumulation of foam.
- Pulp compotes are stored for a sufficiently long time under proper storage conditions.
- It should be remembered that in the bones contains hydrocyanic acid, and store this drink should not be more than one year, while better stick the date of manufacture on the can.
